What led you to wedding catering?

I first fell in love with catering while I was working banquets for the Spurs at the AT&T center in San Antonio. I was fresh out of culinary school, and knew already my place would be in the field of hospitality. I further began my career working in many different areas of the industry, and realized that catering events- especially weddings, was my favorite. I love the aspect of building a relationship with my clients, and being part of their special day is a honor.

What keeps you passionate about weddings?

Each couple has a love story to share. Each wedding reflects on their love story. This keeps it fun and exciting, and to be able to utilize my creative talents, for weddings especially, keeps my own love and passion alive.

How long have you been in the catering business?

I have been a part of the industry for ten years, and in business for myself for three years. I really enjoy learning something new with upcoming trends and it never seems to get boring. I love that food brings people together.

Where do you find inspiration?

I'm always surrounded by inspiration. I'm easily inspired and being a free spirit, I gather it from people, places and the things around me. The senses – see, touch, smell, hear and feel – whether it be with words, a conversation, imagination, art, music, food, and nature. I think inspiration just flows all around.

What should couples know before hiring a caterer?

First of all, they need to enjoy the food! Haha- but seriously, yes, make sure you love the taste and presentation of the food given. Make sure you are receiving the quality service you want. Secondly, It's all about building that relationship. I really enjoy getting to know the couples, their story, and being part of their special day. It definitely means building a relationship you can remember for a lifetime.

What questions should couples be asking that they don’t know to ask?

I think it helps if a couple brings a checklist with them to cover all the bases of their wedding day. Each event and wedding is different- like putting together a new puzzle, and just making sure the pieces fit right.

What sets you apart in your industry?

My creativity and personal touch. My visual and innovative perspective to the atmosphere of their wedding day. I coordinate the event that best fits the personality of each couple, and customize the menu based on their required taste. Not only am I an executive chef, but I am also a caterer that offers other services. My staff is directly involved in the preparation and execution of each event.

Outside of catering, tell us about yourself!

I am happily married with two boys. As a family we enjoy going to church, parks, and hanging out by our pool and entertaining family and friends. Personally, I am very outgoing, spontaneous, love the outdoors, traveling, concerts, sports, and to try new adventures. I love spending time with my girlfriends and working out at the gym. I also enjoy working ministry feeding to under privileged children dinner four days a week.

What common mistakes do you see couples making?

It's always best to communicate closely with your vendors, and also ensure we all are on the same page. I feel it is important to have a guideline or some form of itinerary for your special day, so everything can operate smoothly.

What is your best piece of advice for couples planning a wedding?

Always read the fine print on your contracts so you don't miss out on the details of what you agree to. It's also best to never assume that a service is provided. Ask as many questions that you need to, so you can confirm what is included.

What’s the most unusual wedding you ever did?

Since I do not discriminate, I was asked to cater a same sex reception between two males. They exchanged their vows out of state, came back home to Seekatz Opera House to have their reception. It was a privilege to be part of their marriage celebration. Definitely one of the most fun receptions I ever did!

What was the most memorable wedding you ever worked, and why?

I was asked to cater a back yard wedding for last June. The couple I met at the New Braunfels Farmers Market one Saturday morning while I was doing an omelet station. They saw I utilized fresh ingredients, so they asked if I could cater their wedding and offer a vegetarian option. Although this wedding was in a back yard, it became one of the most beautiful ceremonies. The reception was under a tent, with pretty lights draped, and I was able to setup my food truck and cater to the crowd from there. I'll never forget it.
